Would you like to eat a conscious free meal? Well, that is as simple as just mixing some veggies together.
For this recipe, all you have to do is pour couple spoons of olive oil into a fry pan, add some minced fresh garlic and chopped onions.
Over high heat, keep stirring until you see the onions and garlic staring to become slightly golden, add some veggies and seasoning to your preference. Stir vegies for 1 to 2 minutes and pour into a serving dish. They will be crisp and keep their individual flavor. If you like Parmesan cheese, sprinkle some on top and voilà. Delicious!
For this one I had eggplant, cherry tomatoes, green and yellow squash. Sometimes I substitute olive oil with coconut oil for a different taste. Also, I usually have plenty of dry seasoning, like parsley, oregano, and thyme that I add to practically every dish I prepare.
